With the brisk chill in the air, it’s safe to say that fall is finally here! 🍁🎃
As we look forward to warmly spiced soups and hearty stews, we can’t think of a better pairing for these comforting fall dishes than a slice of sourdough bread from our October featured vendor, Madison Sourdough Company!
A Bakery, Mill, and Café?!
Madison Sourdough Company (MSCo) is co-owned by lead baker, Andrew Hutchison, and David Lohrentz. It originally opened in 1994 under different owners, but Hutchison and Lohrentz bought it in 2006, excited to revitalize the business.
Located at 916 Williamson St. in Madison, WI (9.6 miles from Vitruvian Farms!) MSCo is more than just a bakery. Along with producing their sourdough loaves 360 days of the year, MSCo also bakes pastries, mills grains, caters, and operates a café, all in the same place!
It Matters What’s Inside
MSCo sources their grains from Wisconsin growers, with 40% of their grain specifically coming from Meadowlark Organics. Milling much of their grain in house means that the bakers can become intimately familiar with each batch of flour, ensuring that their resulting loaves are perfect (which is critical when each loaf takes 36 hours to complete!). In keeping with their local roots, MSCo uses milk, eggs, and butter from WI to craft their French-style Viennoiserie (yeast-leavened) pastries.

Hutchison and MSCo have also contributed to participatory research, hosting baking trials to assess how well-suited new varieties of organic bread wheat are to baking.
While MSCo is not certified organic, they do use certified organic grain in at least 40% of their baking and demonstrate a strong commitment to their local food system. Transitioning their entire operation to organic is a long-term goal of Hutchison’s, but the process will be long and difficult, requiring the business to reassess their supply chain.
You can purchase their breads and pastries directly through their storefront, or you can find them at a wide variety of cafés, restaurants, and grocery stores across the Madison area.
